Veritas Brut Nature

Based on the Mallorcan native variety Moll, and following the traditional method “Champenoise”.
10% of the base wine comes from a fine-grained selection casks of French oak. Disgorgement is carried out without adding expedition liqueur, making it as a “Brut Nature” of Binissalem.

Mediterranean Rosé

Manual harvest and refregeration of the grape in cold stores at 0 degrees. After removal of the scratch and a slight grain crushing, maceration takes about an hour in order to limit the extraction of coloring matter and to obtain this very pale pinkish color. Fermentation in stainless steel tanks at low temperature to preserve its aromatic components.

Maximum expression in Whites

The grapes are harvested and stored in refrigerated cases at 0 degrees. Maceration in pneumatic presses for 12 hours to encourage the extraction of aromatic elements. Static settling and beginning of alcoholic fermentation in stainless steel tanks. Wine racking in French oak barrels, keeping his upbringing in the lees for about three months.

Vines with tradition

Manual selection of the grapes in the oldest vineyards owned by the winery. Grape cooling at 0º C for three days. Fermentation in French and American Oak. After a brief rest in stainless steel tanks to remove coarse particles, aging starts in barrels of French and American oak for one year.

Fermentation and maceration for 21 days in stainless steel tanks at about 28 degrees. Aging for about 24 months in new fine-grained selection casks of French and American oak.

Pure Muscat

Manual harvest in boxes and storage in cold stores at 0 degrees. Cold maceration to encourage the extraction of aromatic elements. Must is obtained at low pressure by means of pneumatic presses. Controlled fermentation at about 12 degrees in stainless steel tanks. Fermentation stops at 0 degrees.

Sweet Wine

Over-maturing of the grapes on the vine in order to get a light raisining and concentration of the sugar. Manual harvest in plastic boxes and storage of the grape in cold stores at 0 degree. Fermentation at a controlled temperature of about 12 degrees. Fermentation stops at 0 degrees.
